Help Edit ROM to change Text displayed for some items

Looking for someone with experience editing ROMs to change the text. I'm using SWRDS rom for Fallout and have a few words I want to change. I used a HEX editor to change the ANSI text but that doesnt seem to change what is sent to the DMD screen.

I have only ever seen this done by one person. @watacaractr
Maybe he could give you some advice?
He has done this with his Tom & Jerry, Beach Bums, Cheech and Chong, and Beavis and Butthead tables.
