Got to say I do like a bit of cheese, maybe it is genetic? Really rich strong cheeses I like to try, some I'll admit are not what I hoped for, then again some are really tasty and a cold sweat I find is a great indication of a great cheese, wonder if they licked the bowls?

Not sure about this now, but a long time ago I read that cheese was discovered when, using a animal stomach as a vessel to carry milk, the enzymes that had been left in the stomach coagulated the milk to cheese.

These days the enzymes in many forms of cheese may be from animal sources or from plants and fruits. The enzymes of a Papaya can be used for the purpose.

i tried making soy cheese once starting with nothing but beans and coagulant (nigiri, i think). real pain in the arse to get the flavor / consistency right. then again, soy cheese can be eaten as soon as it sets, as opposed to milk cheese, which needs to ripen.

i've seen some quick and (supposedly) tasty recipes for mozzarella cheese you make partly in the microwave. takes only an hour or two, i think. no, seriously.

real mozzarella and a lot of european cheeses you can't actually get in the states because of the extra pasteurisation process that's imposed on cheese imports. something like that. that's part of why mozzarella in particular is so bland and tasteless in the states- it's been nuked.

i gave up cheese about six months ago as part of huge dietary changes to get my cholesterol down. fortunately a lot of the zestiness / savory flavor can be replaced with nutritional yeast powder, but only when you mix it with something else.... in the right proportions.

there's nothing else like pure cheese i know of in this world...
